Watermelon Mojito Salad

So I heard about this salad on a vlog that I follow and it sounded soooooo good I had to try it. I followed this recipe (it has lots of pictures of the yummy salad, I don’t take pictures, I don’t have a camera!) and it was as delicious as I thought it would be. It was sweet, a bit salty, and tangy. Yuuummm. Although be careful when messing with a peeled watermelon. Those boogers are slippery! I dropped half on the floor, which my fur babies quickly ate, and in my attempt to catch it I stepped in their water bowl. It was a huge sticky mess! Try this salad. It’s seriously delicious.

Watermelon Mojito Salad
3 cups seedless watermelon, cubed (I did small cubes)
1 1/2 cups seedless cucumber, cubed
2 Tbsp mint leaves (my leaves were tiny, so I didn’t slice them)
2 Limes juice and zest from each
1 Tbsp olive oil
Salt and Pepper to taste

1. Take the rind off the watermelon and cut into cube size of your preference
2. Cube the cucumber as well. (You can peel it if you want to. I didn’t but wished I would have.)
3. Stack the mint leaves and roll together. Slice so that you have little shreds. (Like I said, mine were tiny so I just tore them up a bit.)
4. In a small container add the lime juice, zest, olive oil, salt, and pepper. Mix together and pour over salad. Toss and enjoy!

This salad only kept for about two days, and I had made slightly more than the recipe called for. It really makes a lot, so adjust it to how you would like!
